Looking for a new one. I really don't want to have to gradually change belts to get an edge. So I have ruled out the belt sanders. Looking for a quick way. Our knives are not super quality, just want to cut tomatoes and onions with out mashing them.

Was looking at the Chefs Choice units, but which one?
