Lots of personal preference here, but I use one of two...
If I'm tying up fresh leaders, and thus have access to both ends of the leader, I'll use the Kite-Fisher Snell knot - super easy to tie. Capt Travis Patsel (Cats n Stripers) has a good YouTube video on this.
If not, or tying mainline to swivel, etc, I use a Uni-knot. Always make sure to lubricate the line before snugging it down, etc....
Others use the Palomar knot or others with good success.

Snell on the hook for new leaders. Palomar if replacing the hook on a tied in leader.
Spit on your knots before you cinch it and they'll be stronger.

Palomar anytime it will work, always with lure or hook tie. Just my preference

I use the Travis snell on my main hook.
I use a Palomar on everything that I can.
If I am tying a leader to a swivel that is already attached to my main line, I use a uni knot.
For sewing nets, I use a half hitch followed by a half hitch with a twist.
For tying braille lines to the lead line, I use a uni knot.
For tying leaders to braid, I use an FG knot.
Saliva is key.
The more knots you can tie in your living room, the better. Tying knots in the field tend to be more risky. Minimize this risk as much as possible.
Along with becoming a confident knot man, I also recommend changing leaders often and snipping off a few yards of main line frequently.
I used to lose fish all the time. I rarely do now.

When you say with a twist do you mean you just go opposite of the previous half hitch? When you are done “sewing” what knot do you finish it off with?

Every knot I use on a mono net starts with a half hitch. With mono you can then increase or decrease your loop size or correct for whatever your doing. I then finish off every knot with a half hitch that is tied right over the original half hitch only I go through the loop twice. This is called a half hitch with a twist and is used to lock in the knot. Here is an illustration.
