Two oars - nice fish, particularly the big one from other post. This is probably not the section to ask (and this may get moved) but how have you prepared these fish for the table? Always looking for new recipes! Hey Hillbilly, I was reading through old posts (started by searching on Striperjohn) and realized I never responded to this. I've cooked them a lot of ways. Batter fried of course, and grilled on foil, but I put holes in the foil to let the fat drip out, because supposedly the fat holds whatever toxins there are. Last week a friend said she wanted to cook one for me. She peeled and sliced potatoes and laid them on waxed paper and foil on a cookie sheet, then put fillets on the potato slices, with lime, salt, pepper and I'm not sure what else because I was on music duty. Wrapped it all tight in more foil, baked at 400 for 35 minutes I think. Anyhow that was different, and real good. I also like the recipies for striper jerky and striper salad that I found elsewhere on the forum. I need to try the cedar plank he recommended.
