What does everyone thinks are the best bait to cast at night. And does that change with the weather?

Storm Thunderstick - Chrome sides, Blue Back
Cotton Cordel Jointed Redfin - Solid chrome or chrome with black or blue back.
Rapala Vampire - Black, silver & red
Zoom Super Flukes - Pearl, Albino white on 3/8 or 1/4 ounce jig heads
White Bucktails
Rebel "Fast Trax" Medium running minnow crankbait - White belly, silver sides, blue back
Weather doesn't make much difference, but the full moon will. When fishing full moon, it's better to fish the darker banks not being lit up by the moon light.
The above are my favorite artificials, and 99% of my night time stripers have come off one or the other. I fish each one until I find out what the fish want the best, then concentrate on fishing that lure for the night. Sometimes, depending on where your fishing, they will want something different, in different places. Don't be afraid to experiment until you find out what they want, and how they want it, at each spot you try.

Thunderstick - chrome/wit black back , swimbaits , redfins chrome wit black back , xraps and everything Ghost said. Have 6 or 7 rods on deck wit something differant on each. Fish thundersticks an redfins very slow, make a slow wake wit bait an hold on !!

Rapala F18 in color Vampire. Can be purchased from Captains Quarters.
Or you could fly fish...

We had good luck from the Rapala F18 vampire that everyone has mentioned but also just as good with the black and gold.

A real sleeper lure that I discovered years ago is the large Manns 1minus. My son was casting the Grey Ghost color and the stripers were blasting it. It floats, runs shallow, and wobbles and creates one heckuva wake and ruckus.

I fish the same ones except for the Storm Thundersticks, haft to get a couple I guess.

You might try Strike King Baby Wake Shad and KVD 1.5 square bill. Green gizzard shad and sexy shad have been my best colors.
