I like to fish throughout the night, or until I am satisfied that the bite is over. Here is why: You just never know when they'll start.
So I start at dusk and just fish. What I have noticed is that on most nights, the couple hours after it gets dark is pretty slow. I call this the transition/digestion time. The bait and fish are transitioning into their nighttime patterns, and the fish are probably still digesting dinner that they had at dusk. After this lull, it tends to pick back up, but slowly. There is usually about an hour of peak fishing where its "on", then it rapidly winds back down as the fish are now full and beginning to transition back to daytime patterns along with the bait. By dawn, they are hungry again..
Some of this does not hold true depending on weather and moon phases, but it is what I have observed on most nights. This has held true for stripers and walleyes.
Of course, if you aren't in the right places, the fishing may not be as good. Once I find a spot, I hang out there most of the night. I am fishing certain structure and letting the fish come to me.
