Here's one a friend told us about and it's been our go-to since.... Ingredients:- Striper filets, fresh (always best) or frozen
- 1 or 2 eggs
- 1 box of all-in-one instant Pancake batter (the kind you just have to add water to)
Directions:- Cut up your striper into bite-sized nuggets
- Scramble an egg or two in a small bowl
- Dip the striper nuggets into the egg just enough to wet it in the egg
- Hand toss the egg-moistened striper nuggets in pancake batter
- Pan, or deep-fry till a golden brown
- Slap your momma because it's so good!

Bet maple syrup will go good with that too! Who said bananas and chocolate chips is the only thing you can put in pancakes!

Thanks for the recipe. What did the boys think of it? I've been in the south since age 8 but I don't know what Slap your momma means. I hope it isn't literal.

Tried a variation of this. I usually do the same thing but use House Autry mildly hot instead of the pancake mix and fry in peanut oil. I did that on Wednesday night when I got back then on Tuesday we took this idea and actually made the batter and deep fried the batter dipped nuggets. They were awesome! They kind of came out like tempura so we made a quick tempura sauce (seafood stock, soy, water and rice wine vinegar) for dipping. Definately recommend it!

Just wanted to say I tried this tonight on some fresh stiper I just brought back from the bay and it was off the hook ! My 5 year old chomped it down like chic-fil-a nuggets. definately will use again
